  • 1 teaspoon salt (for dough), plus coarse sea salt or pretzel salt for topping
  • ½ cup baking soda (for boiling bath)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 8 ounces sharp cheddar cheese, freshly grated
  • ¾ cup lager or pilsner beer
  • 4 ounces cream cheese, softened
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Activate the yeast: In the bowl of a stand mixer (or large mixing bowl), combine warm water and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix on low speed until combined. Gradually add remaining 2 cups of flour, one cup at a time, until a shaggy dough forms. Knead on medium speed for 5-7 minutes until smooth, elastic, and slightly tacky.
  3. First rise: Form dough into a ball and place in a lightly greased bowl. Cover with a towel or plastic wrap and let rise in a warm, draft-free spot for about 1 hour, until doubled in size.
  4. Shape the bites: Punch down dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a 1-inch thick rope. Cut into 1-inch bite-sized pieces. Place on a parchment-lined baking sheet.
  5. Baking soda bath: Preheat oven to 425°F (220°C). Bring 8 cups of water to a rolling boil in a large pot. Carefully add ½ cup baking soda (it will bubble vigorously). Reduce heat to a gentle simmer. Working in batches of 6-8 pieces, drop pretzel bites into water for 20-30 seconds, flipping halfway. Transfer back to baking sheet, spacing 2 inches apart.
  6. Egg wash and salt: Whisk egg with 1 tablespoon water. Brush each pretzel bite generously with egg wash. Sprinkle with coarse sea salt or pretzel salt while still wet.
  7. Bake: Bake for 12-15 minutes, rotating sheet halfway through, until deep golden brown. Let cool on baking sheet for 5 minutes.
  8. Make the beer cheese dip: In a small saucepan over medium heat, combine beer and cream cheese. Whisk constantly until smooth. Add Dijon mustard, garlic powder, and Worcestershire sauce; whisk to combine. Gradually add shredded cheddar cheese, a handful at a time, whisking until each addition is melted. If too thin, whisk in cornstarch slurry and cook for 1 minute until thickened. Season with salt and pepper. Keep warm over low heat.

Don’t skip the baking soda bath—it gives pretzels their signature dark, chewy crust. Grate your own cheese for a smooth dip. For best results, use a lager or pilsner beer.
