  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour, spooned and leveled
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup candy corn
  • Optional: ¼ cup white chocolate chips for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed for about 3 minutes until light and fluffy.
  3. Add the whole egg, egg yolk, and vanilla extract. Beat on medium speed until well combined, about 1 minute.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Add the flour mixture to the butter mixture in two additions, mixing on low speed after each until just combined.
  6. Transfer the dough to the prepared pan. Press into an even layer using a spatula or lightly greased fingers.
  7. Sprinkle the candy corn evenly over the dough, pressing each piece gently so it sits about halfway into the dough.
  8. Bake for 22-26 minutes, until edges are lightly golden and center is set but still soft. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Cool in the pan on a wire rack for at least 30 minutes. Then lift out using parchment overhang and cool completely before cutting.

Notes

Don’t skip the parchment paper. Room temperature ingredients matter. Press the dough evenly. Watch the candy corn to prevent burning. Let bars cool completely before cutting.
