  • ¾ cup (85g) chopped walnuts
  • ½ cup chocolate chips (optional)
  • ¼ cup raisins or dried cranberries (optional)
  • 2 tablespoons flaxseed meal (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini on the large holes of a box grater until you have 1½ cups. Do not squeeze out moisture.
  3. Toast walnuts on a baking sheet in the preheating oven for 5-7 minutes until fragrant. Let cool.
  4. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. In a large bowl, whisk eggs and sugar until pale and slightly thickened, about 1 minute. Add oil and vanilla; whisk until smooth.
  6. Fold grated zucchini into the wet mixture using a rubber spatula until evenly distributed.
  7. Pour dry ingredients into wet mixture. Fold gently until no streaks of flour remain. Do not overmix.
  8. Fold in toasted walnuts and any optional add-ins (chocolate chips, raisins, etc.) with a few strokes.
