  • 8 ounces burrata cheese (e.g., BelGioioso)
  • 3 tablespoons honey (local wildflower honey recommended)
  • 2 tablespoons aged balsamic vinegar
  • 1/4 cup packed fresh basil leaves (small, tender leaves)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon flaky sea salt (e.g., Maldon)
  • 1/4 teaspoon freshly ground black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Soak the skewers in water for at least 30 minutes before grilling to prevent burning.
  2. Preheat your grill to medium-high heat (400-450°F / 200-230°C) with the lid closed for at least 10 minutes.
  3. Wash and dry the peaches. Cut each peach in half, remove the pit, and slice each half into 4 wedges (8 wedges per peach).
  4. Thread the peach wedges onto the soaked skewers, dividing evenly (about 4 wedges per skewer), leaving space between each piece.
  5. Brush the peaches with olive oil on both sides. Season lightly with salt and pepper.
  6. Clean and oil the grill grates using a grill brush and a paper towel dipped in oil held with tongs.
  7. Grill the peach skewers for 3-4 minutes per side, until distinct grill marks appear and the peaches have softened slightly but still hold their shape.
  8. While the peaches grill, warm the honey and balsamic vinegar together in a small saucepan over low heat or microwave for 15-20 seconds. Stir to combine.
  9. Remove the skewers from the grill and arrange them on a serving platter. Let cool for 2-3 minutes.
  10. Tear the burrata into pieces and arrange around the skewers.
  11. Drizzle the honey-balsamic mixture generously over everything in a zigzag pattern.
  12. Finish with flaky sea salt, a few cracks of black pepper, and fresh basil leaves scattered over the top. Serve immediately.

Notes

For best results, use firm but ripe peaches. Soak wooden skewers for at least 30 minutes to prevent burning. Serve immediately for optimal texture contrast. If using metal skewers, no soaking needed. For a dairy-free version, try cashew-based ricotta or vegan mozzarella.
