  • 1 cup (240 ml) water
  • 1 cup (200 grams) granulated sugar
  • 2 tablespoons (30 grams) pumpkin puree (100% pure, not pumpkin pie filling)
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract

Instructions

  1. Combine water and sugar. Pour 1 cup of water and 1 cup of granulated sugar into a small saucepan. Place over medium heat. Whisk gently until the sugar dissolves completely, about 2 to 3 minutes.
  2. Add the pumpkin puree. Once the sugar is dissolved, add 2 tablespoons of pumpkin puree. Whisk vigorously to break up any clumps until the mixture looks smooth and uniform, about 1 minute.
  3. Stir in the spices. Add 1½ teaspoons of pumpkin pie spice. Whisk to combine.
  4. Simmer gently. Bring the mixture to a gentle simmer (small bubbles around the edges). Let it simmer for 5 to 7 minutes, stirring occasionally.
  5. Remove from heat and add vanilla. Take the saucepan off the burner. Stir in 1 teaspoon of vanilla extract.
  6. Strain the syrup. Place a fine-mesh strainer over a heat-safe bowl or storage jar. Pour the syrup through the strainer. Use the back of a spoon to press the liquid through.
  7. Cool completely. Let the syrup cool to room temperature before sealing the jar, about 30 minutes.

Notes

For a sugar-free version, use monk fruit sweetener or allulose in equal measure. The texture will be slightly thinner. Store in the refrigerator for up to 2 weeks. Shake before each use as pumpkin puree may settle.
