  • 3 cups shredded Mexican blend cheese (or a mix of cheddar and Monterey Jack)
  • 1 lb ground beef (80/20) OR 1 lb boneless, skinless chicken breasts, cooked and shredded OR 1 can (15 oz) black beans, drained and rinsed (for vegetarian option)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cayenne pepper for heat
  • 1 can (15 oz) black beans, drained and rinsed (if not using as protein)
  • 1 cup sour cream
  • 1 cup pico de gallo or salsa
  • 1/2 cup sliced black olives
  • 1/4 cup pickled jalapeño slices (for goalposts)
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, diced (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook your protein: If using ground beef, heat a skillet over medium-high heat. Add the beef and cook, breaking it up with a spatula, until browned—about 6-8 minutes. Drain any excess fat. If using chicken, cook it through (about 6 minutes per side in a pan) and then shred it with two forks. For black beans, just warm them in a small saucepan with a splash of water.
  3. Season the protein: Add chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne (if using) to the cooked protein. Stir well and cook for 1 more minute until fragrant.
  4. Prepare your baking sheet: Line your baking sheet with parchment paper or aluminum foil. Spread the tortilla chips in an even layer.
  5. First layer of cheese: Sprinkle about 1 cup of the shredded cheese evenly over the chips.
  6. Add the protein: Distribute your seasoned meat or beans evenly over the cheese layer.
  7. Second layer of cheese: Sprinkle the remaining 2 cups of cheese over the top.
  8. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, until the cheese is fully melted and bubbly.
  9. Create the football field design: Remove the platter from the oven and let it cool for 2 minutes. Using a spoon, create ‘yard lines’ by placing rows of black beans across the width of the platter, about 2 inches apart (5-6 rows). For the ‘hash marks,’ place small spoonfuls of sour cream in the center of each row. At each end of the ‘field,’ place two jalapeño slices to look like goalposts.
  10. Add remaining toppings: Dollop the pico de gallo or salsa in a few spots, scatter the black olives, and sprinkle the chopped cilantro over everything. If using avocado, add it last.
  11. Serve immediately.

Notes

For the best texture, use a block of cheese and shred it yourself. Pre-shredded cheese has anti-caking agents that don’t melt as smoothly. If using ground beef, 80/20 is recommended for flavor. For extra crispy chips, bake the platter on the bottom rack for the last 2 minutes. Have all toppings prepped before baking to add cold toppings quickly after removing from oven.
