Ingredients

Scale
  • 1/2 cup (115g) unsalted butter (for browning)
  • 1 3/4 cups (220g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup (240ml) pumpkin puree (canned or fresh)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk or plain yogurt
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar (for cream cheese swirl)
  • 1/2 teaspoon vanilla extract (for cream cheese swirl)
  • 1 tablespoon all-purpose flour (for cream cheese swirl)
  • 1/2 cup (60g) chopped walnuts
  • 1/4 cup (50g) light brown sugar, packed (for streusel)
  • 2 tablespoons unsalted butter, melted (for streusel)
  • 1/4 cup (30g) all-purpose flour (for streusel)
  • 1/2 teaspoon ground cinnamon (for streusel)

Instructions

  1. Brown the Butter (about 5 minutes): In a small saucepan, melt 1/2 cup unsalted butter over medium heat. Swirl frequently until foam forms and brown specks appear. Remove from heat immediately when nutty aroma and golden brown color develop. Transfer to a heat-safe bowl and let cool slightly.
  2. Prepare the Cream Cheese Swirl (about 5 minutes): Beat 4 oz softened cream cheese with 1/4 cup sugar, 1/2 teaspoon vanilla extract, and 1 tablespoon flour until smooth and creamy. Chill in fridge while preparing batter.
  3. Mix Dry Ingredients (about 3 minutes): Whisk together 1 3/4 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon cloves, and 1/4 teaspoon ginger in a large bowl.
  4. Combine Wet Ingredients (about 5 minutes): In a separate bowl, whisk 1 cup pumpkin puree, 2 eggs, 1 teaspoon vanilla extract, cooled brown butter, 1 cup granulated sugar, 1/2 cup brown sugar, and 1/2 cup buttermilk until smooth.
  5. Combine Wet and Dry (about 2 minutes): Pour wet ingredients into dry and gently fold with a rubber spatula just until combined. Batter should be thick and slightly lumpy; do not overmix.
  6. Assemble Muffins (about 10 minutes): Preheat oven to 350°F (175°C). Line muffin tin with liners or grease well. Fill each cup halfway with batter (~2 tablespoons). Add ~1 tablespoon cream cheese mixture on top, then spoon more batter to fill about 3/4 full. Use toothpick to swirl cream cheese gently.
  7. Prepare Walnut Streusel (about 5 minutes): Mix 1/2 cup chopped walnuts, 1/4 cup brown sugar, 2 tablespoons melted butter, 1/4 cup flour, and 1/2 teaspoon cinnamon until crumbly. Sprinkle generously on each muffin.
  8. Bake (20-25 minutes): Bake until toothpick inserted (avoiding cream cheese swirl) comes out clean and tops are golden with crisp streusel.
  9. Cool (about 10 minutes): Let muffins cool in tin for 5 minutes, then transfer to wire rack to cool completely to keep streusel crisp.

Notes

Use a light-colored pan to brown butter to avoid burning. Chill cream cheese mixture well before swirling to prevent sinking. Fold batter gently to avoid tough muffins. Add streusel topping just before baking to keep it crunchy. Tent muffins with foil if streusel browns too quickly.
