  • ½ cup blue cheese crumbles
  • ⅓ cup mayonnaise (full-fat recommended)
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Freshly ground black pepper, to taste
  • 12 slider buns, split and lightly toasted (King’s Hawaiian recommended)
  • Optional: extra blue cheese crumbles for garnish

Instructions

  1. Prepare the Buffalo Sauce: In a medium bowl, whisk together ½ cup hot sauce, melted butter, garlic powder, smoked paprika, salt, and pepper. Set aside.
  2. Shred the Chicken: Shred 2 cups of cooked chicken using forks or fingers.
  3. Toss Chicken in Sauce: Add shredded chicken to the buffalo sauce and toss until evenly coated. Set aside to marinate briefly.
  4. Make the Blue Cheese Slaw: In a bowl, combine shredded cabbage and blue cheese crumbles. In a separate small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, honey, and black pepper until smooth. Pour dressing over cabbage and cheese, then toss gently to coat. Chill for 10-15 minutes.
  5. Toast the Slider Buns: Preheat oven to 350°F (175°C) or use a toaster. Place buns cut side up on a baking sheet and toast for 5-7 minutes until lightly golden.
  6. Assemble the Sliders: Spoon buffalo chicken onto each bun bottom, top with a heaping spoonful of blue cheese slaw, add extra blue cheese crumbles if desired, then cap with the top bun and serve immediately.
