Cozy Crockpot Buffalo Chicken Dip – Easy Party Recipe

This creamy, spicy, and tangy buffalo chicken dip is made in the slow cooker with simple ingredients. Perfect for game day, potlucks, or any gathering, it’s a crowd-pleaser that disappears fast.

  • 2 lbs boneless, skinless chicken breasts (about 900g)
  • 16 oz cream cheese, softened (450g)
  • 1 cup buffalo hot sauce (240ml)
  • 1 cup ranch dressing (240ml)
  • 1 cup shredded cheddar cheese (120g)
  • 1/2 cup crumbled blue cheese (60g), optional
  • 2 tablespoons unsalted butter (28g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped green onions for garnish

Instructions

  1. Place the 2 lbs (900g) of chicken breasts in the bottom of your crockpot. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  2. Cut the 2 tablespoons (28g) of unsalted butter into small pieces and scatter them over the chicken. Sprinkle the 1 teaspoon garlic powder and 1/2 teaspoon onion powder evenly on top.
  3. Cover the crockpot with the lid and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  4. Carefully remove the cooked chicken to a cutting board and shred with two forks. Return the shredded chicken to the crockpot.
  5. Cut the 16 oz (450g) of softened cream cheese into cubes and add to the crockpot with the shredded chicken. Pour in the 1 cup (240ml) buffalo hot sauce and 1 cup (240ml) ranch dressing. Stir gently until the cream cheese starts to melt and combine.
  6. Sprinkle the 1 cup (120g) shredded cheddar cheese and 1/2 cup (60g) crumbled blue cheese (if using) over the top. Stir again until evenly distributed.
  7. Cover the crockpot again and cook on LOW for another 30-45 minutes, or until the dip is hot, bubbly, and fully combined. Stir once halfway through.
  8. Taste and adjust seasoning, adding more hot sauce or ranch as desired.
  9. Garnish with chopped green onions and serve directly from the crockpot on the ‘Warm’ setting, or transfer to a serving bowl.

Notes

For best results, let the dip sit in the crockpot for at least 3 hours to meld flavors. If dip is too thin, leave lid off for 10-15 minutes. If too thick, stir in a splash of milk or extra ranch. Can be made ahead and reheated.
