A warm, comforting peach cobbler featuring fresh peaches and a caramel-kissed brown sugar biscuit topping, perfect for cozy weekends or gatherings.

Ingredients

Scale
  • 6 to 7 medium ripe peaches, peeled and sliced
  • 1/2 cup packed brown sugar, divided (preferably dark brown sugar)
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour (or almond flour for gluten-free)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup whole milk (or dairy-free milk)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, combine peeled, sliced peaches with 1/4 cup brown sugar, granulated sugar, lemon juice, and cinnamon. Toss gently to coat evenly. Let sit for 10 minutes.
  3. In a separate bowl, whisk together flour, baking powder, salt, and remaining 1/4 cup brown sugar. Add cold cubed butter and cut into dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. Stir in milk and vanilla extract just until dough comes together. Do not overmix; dough should be soft but sticky.
  5. Pour peach mixture into prepared baking dish, spreading evenly. Drop spoonfuls of biscuit dough over peaches, covering as much as possible.
  6. Bake for 35-40 minutes until biscuit topping is golden brown and a toothpick inserted comes out clean. Peach juices should be bubbling around edges.
  7. Let cobbler rest for about 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

Peeling peaches is optional but recommended for a silky filling. If topping browns too fast, tent with foil halfway through baking. Cold butter is key for flaky biscuit topping. Dough should be mixed just until combined to avoid toughness. Peach filling can be prepared ahead and refrigerated.
