Cozy Ghost Meringue Cookies: Easy Halloween Treat

These adorable ghost-shaped meringue cookies are light, airy, and taste like toasted marshmallows. Made with simple ingredients, they’re perfect for Halloween parties or a cozy night in.

  • 3 large egg whites, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (about 1/8 teaspoon)
  • 1 tablespoon melted dark chocolate (for faces)

Instructions

  1. Preheat your oven to 200°F (95°C). Line a large baking sheet with parchment paper.
  2. Separate your eggs while cold, then let the whites come to room temperature (about 20 minutes).
  3. In a clean, grease-free bowl, combine the egg whites and cream of tartar. Mix on medium speed until foamy, about 1-2 minutes.
  4. Gradually add the sugar, one tablespoon at a time, while mixing on medium-high speed. This takes about 3-4 minutes.
  5. Add the vanilla and salt. Continue beating on high speed until stiff, glossy peaks form, about 3-5 minutes. The mixture should look like marshmallow fluff.
  6. Test the meringue by rubbing a bit between your fingers; it should feel smooth, not gritty.
  7. Transfer the meringue to a piping bag or a zip-top bag with the corner snipped off.
  8. Pipe ghosts onto the prepared baking sheet: squeeze out a 2-inch round blob, then pull the bag straight up to create a peak. Leave 1 inch between ghosts.
  9. Bake for 1 hour 15 minutes to 1 hour 30 minutes, until dry to the touch. Do not open the oven door during the first hour.
  10. Turn off the oven and let the ghosts cool inside with the door closed for at least 1 hour, or overnight.
  11. Once completely cool, melt the dark chocolate. Using a toothpick or small piping bag, draw eyes and a smile on each ghost.
  12. Let the chocolate set in the refrigerator for 5-10 minutes, or at room temperature for 15 minutes.

Notes

Humidity can affect meringue; if it’s humid, add an extra tablespoon of sugar and beat longer. Ensure all equipment is clean and grease-free. For best results, let ghosts cool completely in the turned-off oven.
