  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon fresh sage, chopped (optional, or 1/2 teaspoon dried)

  • 1/4 teaspoon smoked paprika
  • 1/2 cup chicken broth (low-sodium preferred)
  • 1 small onion, quartered
  • 2 sprigs fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle. Take the turkey breast out of the fridge and let it sit at room temperature for about 20 minutes.
  2. Make the herb butter: In a small bowl, combine 4 tablespoons softened unsalted butter, 2 minced garlic cloves, 1 tablespoon fresh rosemary, 1 tablespoon fresh thyme, 1 teaspoon fresh sage (if using), 1/2 teaspoon lemon zest, and 1/4 teaspoon smoked paprika. Mix with a fork until evenly distributed.
  3. Pat the turkey breast dry with paper towels. Season generously with salt and pepper on all sides.
  4. Loosen the skin: Gently slide your fingers between the skin and the meat, starting from the top edge. Spread about half the herb butter directly under the skin, pressing it evenly over the breast meat.
  5. Rub the remaining herb butter all over the outside of the turkey breast. Drizzle with 1 tablespoon olive oil and rub to coat.
  6. Prepare the roasting pan: Place 1 quartered small onion and 2 herb sprigs (if using) in the center of the pan. Pour in 1/2 cup chicken broth. Set the turkey breast directly on top of the onions and herbs.
  7. Roast the turkey for 50 to 60 minutes, or until the internal temperature reaches 155°F (68°C) when inserted into the thickest part of the breast. Start checking at 45 minutes if your breast is smaller.
  8. Let it rest: Transfer the turkey breast to a cutting board and tent loosely with aluminum foil. Let it rest for 10 to 15 minutes.
  9. Make a quick pan sauce (optional): While the turkey rests, place the roasting pan over medium heat on the stovetop. Whisk in a splash of broth or water to loosen the browned bits. Simmer for 2 to 3 minutes, then strain if desired.
  10. Slice and serve: Carve the turkey breast against the grain into 1/2-inch thick slices. Drizzle with the pan sauce and serve warm.

Notes

For crispy skin, pat the turkey dry twice. If the skin browns too quickly, tent with foil. Let the turkey rest before slicing to keep it moist. The herb butter can be made up to 3 days ahead.
