  • Large flour tortillas (10-inch)
  • 8 large eggs, room temperature
  • 2 tablespoons milk or cream
  • Salt and pepper to taste
  • 68 bacon strips, cooked and crisped
  • 250g breakfast sausage, browned and crumbled (optional)
  • Black beans, drained and rinsed (vegetarian option)
  • Cheddar cheese, shredded
  • Monterey Jack cheese, shredded
  • Sour cream or Greek yogurt (for topping)
  • Fresh tomatoes, diced or cherry tomatoes halved
  • Red onion, finely chopped
  • Fresh cilantro, chopped
  • Avocado slices or guacamole
  • Pickled jalapeños
  • Fresh lime wedges
  • For homemade salsa:
  • 3 medium ripe tomatoes, chopped
  • 1 garlic clove, minced
  • 1 jalapeño, seeded and chopped
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped cilantro
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Cook bacon strips in a cold skillet over medium heat for 10-12 minutes until golden and crisp. Drain on paper towels and crumble once cooled. If using sausage, brown 250g crumbled sausage in the same pan for 6-8 minutes and set aside.
  2. Make the salsa by combining chopped tomatoes, minced garlic, chopped jalapeño, diced red onion, chopped cilantro, lime juice, and salt in a bowl. Stir well and let sit to meld flavors.
  3. Scramble eggs by whisking 8 eggs with 2 tablespoons milk or cream, salt, and pepper. Heat 1 tablespoon butter in a non-stick skillet over medium-low heat, pour in eggs, let sit 15 seconds, then gently stir until soft curds form, about 3-4 minutes. Remove from heat.
  4. Warm tortillas individually in a dry skillet for 20-30 seconds per side or wrap in foil and heat in a 350°F oven for 5-7 minutes.
  5. Arrange scrambled eggs, crumbled bacon, cooked sausage, shredded cheeses, diced tomatoes, onions, cilantro, avocado slices, pickled jalapeños, sour cream, and homemade salsa on a large platter or in separate bowls. Add lime wedges on the side.
  6. Build burritos by loading warm tortillas with desired ingredients, folding sides in, and rolling tightly. Optionally, toast burrito seam-side down in a skillet for 1-2 minutes to seal.
  7. Serve immediately and enjoy.

Notes

Cook bacon slowly starting in a cold pan for crispiness. Cook eggs low and slow for soft texture. Warm tortillas wrapped in foil in the oven to keep pliable. Keep wet ingredients separate until assembly to avoid sogginess. Don’t overfill burritos to prevent splitting.
