  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/2 cup packed, chopped sun-dried tomatoes (preferably not oil-packed)
  • 3 cloves garlic, minced
  • 1 cup (240 ml) low-sodium chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 4 oz (115 g) cream cheese, softened
  • 1/3 cup grated Parmesan cheese (about 30 g)
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  2. In a bowl, whisk together softened cream cheese, heavy cream, chicken broth, grated Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Stir in sautéed garlic and chopped sun-dried tomatoes until combined.
  3. Season chicken breasts lightly with salt and pepper on both sides. Optionally, brown them quickly in a hot skillet for 2-3 minutes per side for extra flavor.
  4. Place chicken breasts in the bottom of the crockpot in a single layer. Pour the sauce evenly over the chicken, making sure each piece is well covered. Do not stir.
  5. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. About 10 minutes before serving, gently stir the sauce. If too thin, whisk 1 teaspoon cornstarch with 1 tablespoon cold water and add to crockpot. Cook uncovered for the last 10 minutes to thicken.
  7. Sprinkle chopped fresh parsley over the top for garnish. Serve hot over pasta, rice, or creamy mashed potatoes.

Notes

Sautéing garlic before adding mellows the flavor. Browning chicken is optional but adds flavor. Avoid opening the crockpot lid frequently to maintain cooking temperature. For dairy-free, substitute heavy cream with coconut cream and cream cheese with dairy-free alternatives. Add yogurt at the end if used as a substitute to avoid curdling.
