This rich, spicy Mexican hot chocolate comes together in about ten minutes flat. It’s the shortcut that actually tastes better, using simple ingredients like cocoa powder, cinnamon, and a touch of cayenne for warmth.

  • 2 tablespoons (15 g) unsweetened cocoa powder (preferably Dutch-processed)
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/8 teaspoon cayenne pepper or chili powder (optional, to taste)
  • Pinch of salt
  • Optional toppings: whipped cream, cinnamon sticks, cocoa powder

Instructions

  1. In a medium saucepan, whisk together the cocoa powder, sugar, ground cinnamon, cayenne (if using), and salt until no lumps remain.
  2. Add about 1/4 cup (60 ml) of the milk and whisk into the dry ingredients to form a smooth, thick paste (a slurry).
  3. Pour in the remaining 1 3/4 cups (420 ml) of milk and whisk to combine. Place the saucepan over medium heat.
  4. Heat gently, whisking often, until the mixture is hot but not boiling—look for small bubbles around the edges of the pan. This takes about 5 to 7 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Taste and adjust sweetness or spice as desired.
  7. Divide between two mugs. Top with whipped cream, a cinnamon stick, or a dusting of cocoa powder if desired. Serve immediately.

Don’t rush the heat—medium heat prevents scorching. The slurry step is essential for a smooth texture. Taste and adjust sweetness or spice to your preference. For a dairy-free version, use oat milk or full-fat coconut milk. Leftovers can be refrigerated for up to 3 days and reheated on the stovetop over low heat.
