  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 cup old-fashioned rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 4 tablespoons cold unsalted butter, cut into small cubes
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack to catch any drips later.
  2. Make the caramel sauce first. In a medium saucepan over medium heat, add the granulated sugar. Stir gently as it melts until it liquefies into a deep amber color, about 5 to 7 minutes.
  3. Remove from heat immediately. Add the butter pieces and whisk until melted and incorporated. The mixture will bubble up vigorously.
  4. Slowly pour in the heavy cream while whisking constantly. Stir in the vanilla and flaky sea salt. Set aside to cool slightly.
  5. Prepare the apples. Peel, core, and slice the apples into 1/4-inch thick slices. Toss them in a bowl with lemon juice, flour, cinnamon, nutmeg, and a pinch of salt.
  6. Make the crisp topping. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and work into the dry ingredients until the mixture resembles coarse crumbs. If using nuts, stir them in now.
  7. Assemble the crisps. Divide the apple mixture evenly between two ramekins. Drizzle about 2 tablespoons of salted caramel sauce over each portion. Top each with the oat mixture, pressing down gently.
  8. Bake for 25 to 30 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  9. Let them rest for 5 to 10 minutes after removing from the oven. Warm the remaining caramel sauce and drizzle over the top just before serving.

Notes

For best results, use room temperature heavy cream to prevent caramel from seizing. Let the crisps rest after baking to allow the filling to set. The caramel can be made up to a week ahead and stored in the fridge.
