Cozy Sausage and Potato Soup: Easy One-Pot Recipe

A hearty and comforting one-pot sausage and potato soup with kale, perfect for chilly evenings. This easy recipe comes together in about 45 minutes and is ideal for meal prep.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 3 medium Russet potatoes, peeled and cubed into ½-inch pieces
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 4 cups fresh kale, chopped, stems removed
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Transfer sausage to a plate, leaving about 2 tablespoons of rendered fat in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
  3. Add the potatoes and broth: Add cubed potatoes, stirring to coat. Pour in chicken broth, scraping up browned bits from the bottom. Bring to a boil, then reduce heat to medium-low and simmer, partially covered, until potatoes are tender, about 15-20 minutes.
  4. Return the sausage and add the cream: Stir cooked sausage back into the pot. Pour in heavy cream and stir. Let simmer for about 5 minutes.
  5. Wilt the kale: Add chopped kale directly to the pot and stir gently. Cook until kale is tender but still vibrant green, about 2-3 minutes. Season with salt and black pepper to taste.
  6. Rest and serve: Remove pot from heat and let soup rest for about 5 minutes. Ladle into bowls and serve hot with crusty bread or a simple side salad.

Notes

For a thicker soup, mash about a quarter of the potatoes against the side of the pot before adding the cream. If soup is too thin, simmer uncovered for 5-10 minutes to reduce. If too thick, add a splash of broth or water. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
