A rich, velvety hot chocolate made in the slow cooker with semi-sweet chocolate, coffee, and peppermint extract. Perfect for holiday gatherings or cozy winter nights.

Ingredients

Scale
  • 6 cups whole milk (1.4 liters)
  • 1 cup heavy cream (240 ml)
  • 1 ½ cups semi-sweet chocolate chips (270 grams)
  • ¼ cup unsweetened cocoa powder (20 grams)
  • ½ cup granulated sugar (100 grams)
  • 1 cup strong brewed coffee (240 ml)
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • a pinch of salt
  • For serving: whipped cream, crushed candy canes, chocolate shavings, mini marshmallows (optional)

Instructions

  1. In your slow cooker insert, whisk together the cocoa powder, sugar, and salt.
  2. Slowly pour in the milk and heavy cream while whisking continuously. Add the coffee and whisk until uniform.
  3. Pour in the chocolate chips and let them sit on top without stirring.
  4. Cover and cook on LOW for 1 ½ to 2 hours, stirring once or twice, until chocolate is melted and mixture is hot and steamy.
  5. Stir in the vanilla extract and peppermint extract. Taste and adjust sweetness or peppermint if desired.
  6. Turn slow cooker to ‘Warm’ setting. Ladle into mugs and top with desired garnishes.

Notes

Add peppermint extract at the end to preserve flavor. Use LOW heat to prevent milk from curdling. For a dairy-free version, use full-fat oat milk and dairy-free chocolate chips.
