  • 1 cup wild rice or wild rice blend
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons unsalted butter, softened
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Dice the carrots, celery, and onion into small, even pieces (about 1/4 inch). Mince the garlic finely.
  2. In the crockpot, add the chicken breasts, wild rice, diced vegetables, minced garlic, chicken broth, dried thyme, and bay leaf. Stir lightly to distribute the ingredients.
  3. Set the crockpot to low and cook for 5 hours (or high for 3 hours), until the chicken is fully cooked and rice is tender.
  4. While the soup cooks, mix softened butter and flour in a small bowl until it forms a smooth paste.
  5. After cooking, remove the chicken breasts and shred them using two forks. Return shredded chicken to the crockpot.
  6. Stir the butter-flour mixture into the crockpot. Pour in the heavy cream or half-and-half, then mix well.
  7. Let the soup cook on low for another 30 minutes, uncovered, stirring occasionally. Add broth or water if soup becomes too thick.
  8. Taste and season with salt and pepper as needed. Remove the bay leaf.
  9. Sprinkle fresh chopped parsley on top before serving.

Notes

If you forget to soften the butter, melt it gently before mixing with flour to avoid lumps. Keep heat low during thickening to prevent curdling. For dairy-free, substitute heavy cream with coconut or cashew cream and butter with olive oil. Adjust seasoning gradually to avoid over-salting. Soup thickens as it cools; add broth or water to adjust consistency when reheating.
