These creamy high-protein peanut butter overnight oats are the perfect 5-minute prep breakfast. With 25g of protein per serving, they keep you full until lunch and taste like dessert for breakfast.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (dairy, almond, oat, or soy)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons (32g) natural peanut butter (no added sugar)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)
  • A tiny pinch of salt
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, berries, cinnamon

Instructions

  1. In a jar or container, combine 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons peanut butter, 1 tablespoon honey or maple syrup, and 1/2 teaspoon vanilla extract. Stir until smooth.
  2. Add 1/2 cup rolled oats, 1 tablespoon chia seeds, and a tiny pinch of salt. Stir until fully combined.
  3. Taste and adjust sweetness or peanut butter flavor if desired.
  4. Seal the jar and refrigerate for at least 4 hours, but ideally overnight (8-12 hours).
  5. In the morning, stir the oats well. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for warm oats.
  6. Top with desired toppings and enjoy.

Notes

Use rolled oats, not steel-cut or instant. Stir halfway through soaking if possible for even texture. Warm peanut butter if it’s too thick. Adjust liquid based on yogurt thickness. Let sit at room temperature for 5 minutes before eating for creamier texture. Can be stored in fridge for up to 5 days. Do not freeze.
