This creamy honeynut squash bisque is a quick, easy, and kid-approved fall dinner. Roasted squash creates a sweet, silky soup that’s perfect for busy weeknights.

  • 2 medium honeynut squash (about 1.5 lbs each)
  • 1 large yellow onion, roughly chopped
  • 4 garlic cloves, smashed
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth (low-sodium recommended)
  • ½ cup heavy cream or full-fat coconut milk
  • Salt and black pepper to taste
  • Optional garnishes: extra cream, roasted pepitas, cinnamon, nutmeg, fresh sage leaves

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each honeynut squash in half lengthwise. Scoop out seeds and stringy pulp.
  3. Place squash halves cut-side up on a lined baking sheet. Add chopped onion and smashed garlic cloves. Drizzle with olive oil and season with salt and pepper. Toss onion and garlic to coat, then flip squash cut-side down.
  4. Roast for 30-35 minutes until squash is very tender. Let cool for 5 minutes.
  5. Scoop roasted squash flesh from skins; discard skins.
  6. In a large soup pot over medium heat, add a splash of olive oil. Sauté roasted onions and garlic for 1-2 minutes until fragrant.
  7. Add squash flesh and broth. Stir, scraping up browned bits. Bring to a gentle simmer and cook for 5 minutes.
  8. Remove from heat. Blend with an immersion blender until smooth, or carefully blend in batches in a regular blender.
  9. Return pot to low heat. Stir in cream or coconut milk. Warm through for 2-3 minutes without boiling. Adjust salt and pepper to taste.
  10. Serve immediately with desired garnishes.

Notes

Roasting is essential for deep flavor. Season in layers—add salt before roasting and after blending. Once cream is added, keep heat low to prevent curdling. Soup tastes even better the next day. For regular blender, let soup cool 5-10 minutes and hold lid down with a towel to avoid splatters.
