Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand. Press firmly into the bottom of an 8×8-inch pan. Chill in the fridge for about 10 minutes.
  2. Make the cheesecake filling: Beat softened cream cheese with powdered sugar and vanilla extract until smooth (2-3 minutes). Whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
  3. Assemble the bars: Spread cheesecake filling evenly over chilled crust. Return to fridge to set for about 15 minutes.
  4. Prepare the strawberry topping: Toss sliced strawberries with sugar and lemon juice. For thicker glaze, heat mixture with cornstarch slurry until thickened, then cool. Spread strawberry mixture evenly over cheesecake layer.
  5. Chill and serve: Refrigerate assembled bars for at least 2 hours or overnight. Cut into squares and serve chilled. Use a sharp knife dipped in hot water for clean cuts.
