A creamy, protein-packed overnight oats recipe that comes together in just five minutes. Made with rolled oats, peanut butter, banana, and protein powder, this breakfast is perfect for meal prep and keeps you full until lunch.

  • ½ cup (40g) rolled oats
  • ½ cup (120ml) milk of choice (e.g., unsweetened almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 2 tablespoons (32g) peanut butter (creamy or crunchy)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • ½ ripe banana, mashed
  • 1 teaspoon maple syrup or honey (optional)
  • For topping (optional): sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, cinnamon

Instructions

  1. Mash the banana: In your jar or a small bowl, mash half a ripe banana with a fork until smooth with just a few tiny lumps.
  2. Add the wet ingredients: To the same jar, add the milk, Greek yogurt, and peanut butter. Stir until the peanut butter is mostly incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds, and vanilla protein powder. Stir again until everything looks evenly mixed, making sure there are no dry pockets of protein powder.
  4. Sweeten if needed: Taste a tiny bit of the mixture. If not sweet enough, add a teaspoon of maple syrup or honey and stir.
  5. Seal and refrigerate: Put the lid on your jar and place it in the fridge. Let it sit for at least 6 hours, but overnight (8 hours) is best.
  6. Stir before serving: In the morning, take the jar out, remove the lid, and give it a good stir. If too thick, stir in a splash of milk.
  7. Add toppings: Top with sliced banana, a drizzle of peanut butter, dark chocolate chips, chopped peanuts, or a dusting of cinnamon. Eat cold, or microwave for 30-45 seconds if you prefer warm oats.

Notes

Use rolled oats, not quick or steel-cut. Mash banana well to avoid cold slimy chunks. Protein powder matters: whey absorbs more liquid than plant-based. For meal prep, layer wet ingredients first, then oats, then protein powder on top without stirring; stir in the morning. Let oats sit at room temperature for 5 minutes before eating for better flavor. Best within 3 days; store in fridge up to 5 days. Not recommended for freezing.
