Instructions

  1. Prepare the Potatoes: Wash and dice 4 medium Yukon Gold potatoes into roughly 1-inch pieces. Rinse under cold water to remove excess starch, then pat dry. (10 minutes)
  2. Cook the Sausage: Heat a large skillet over medium heat. Add 12 ounces sliced smoked sausage and cook for about 5 minutes until browned and fragrant. Remove sausage and set aside. (5 minutes)
  3. Sauté the Potatoes: In the same skillet, add about 1 tablespoon oil or butter if needed. Add diced potatoes, season lightly with salt and pepper. Cook undisturbed for 5 minutes to get a golden crust, then stir and cook another 7–8 minutes until fork-tender. (12–13 minutes)
  4. Add Cream and Seasoning: Lower heat to medium-low. Pour in 1 cup heavy cream, stir gently to coat potatoes. Sprinkle 1 teaspoon onion powder, plus additional salt and pepper to taste.   5. Combine Sausage and Finish Cooking: Return browned sausage to skillet, fold gently into creamy potatoes. Warm through for 2–3 minutes. Adjust seasoning if needed. Optionally, sprinkle chopped fresh parsley on top. (3 minutes)
