  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese with ¼ cup granulated sugar, 1 teaspoon vanilla extract, and 1 tablespoon flour until smooth and creamy. Chill in the fridge.
  2. Make the Cookie Dough: Whisk together flour, baking powder, and salt. Cream butter and 1 ½ cups sugar until light and fluffy. Add egg, vanilla, and almond extracts. Gradually add dry ingredients and mix until just combined.
  3. Add Color: Divide dough into portions and knead in gel food coloring as desired.
  4. Shape the Cookies: Flatten 1 tablespoon of dough, add 1 teaspoon cream cheese filling in center, cover with another tablespoon of dough, and pinch edges to seal. Place on baking sheet spaced 2 inches apart. Optionally, create spooky faces with a toothpick.
  5. Bake: Preheat oven to 350°F (175°C). Bake cookies for 12-14 minutes until edges are lightly golden and tops cracked.
  6. Cool: Let cookies rest on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes
