  • 810 medium fresh jalapeños
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives (or green onions)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 12 slices thin-cut bacon, each cut in half crosswise
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Put on kitchen gloves. Cut each jalapeño in half lengthwise. Use a small spoon or paring knife to scrape out the seeds and white membranes.
  3. Optional: Blanch the jalapeño halves in boiling water for 60 seconds, then transfer to ice water. Drain and pat dry.
  4. In a medium bowl, combine softened cream cheese, shredded cheddar, chopped chives, garlic powder, and smoked paprika. Mix until smooth. Season with a tiny pinch of salt and pepper if needed.
  5. Fill each jalapeño half with about 1 to 1.5 teaspoons of the cream cheese mixture, level with the cut edge.
  6. Wrap one half-slice of bacon around each stuffed jalapeño, overlapping the ends on the bottom. Secure with a toothpick.
  7. Arrange the wrapped poppers on the wire rack, spacing them about an inch apart.
  8. Bake for 15-18 minutes, until the bacon is deep golden brown and crispy and the cheese is bubbling at the edges.
  9. Let the poppers rest for 3-5 minutes before removing the toothpicks.
  10. Serve warm with ranch dressing or sour cream for dipping, if desired.

Notes

For less heat, remove all seeds and membranes. For more heat, leave some seeds in. Blanching the jalapeños mellows the heat and softens their crunch. Thin-cut bacon is essential for crispiness. You can assemble the poppers up to 24 hours in advance and refrigerate. Reheat in an air fryer at 350°F (175°C) for 3-4 minutes or in a 375°F (190°C) oven for 5-7 minutes.
