  • 2 3/4 cups (345g) all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • 2 tsp ground cinnamon (plus extra for rolling)
  • 1 cup (120g) chopped pecans, toasted lightly

Instructions

  1. Brown the Butter: In a medium saucepan over medium heat, melt the unsalted butter, swirling occasionally. After about 5-7 minutes, it will foam and then start turning a golden brown with a nutty aroma. Remove from heat immediately to prevent burning and let it cool for 10 minutes.
  2. Toast the Pecans: While butter cools, toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes, stirring often until fragrant and lightly browned. Set aside to cool.
  3. Mix Sugars with Browned Butter & Maple: In a large bowl, combine the cooled browned butter, granulated sugar, brown sugar, and pure maple syrup. Beat with an electric mixer or whisk until smooth and glossy, about 2 minutes.
  4. Add Eggs & Vanilla: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, cream of tartar, salt, and ground cinnamon.
  6. Mix Dry into Wet: Gradually add the dry ingredients into the wet mixture, mixing on low speed or folding with a spatula until just combined. Avoid overmixing to keep cookies tender.
  7. Fold in Toasted Pecans: Gently fold the cooled toasted pecans into the dough, distributing evenly without crushing them.
