  • 2 large naan or store-bought flatbreads (about 8-inch diameter)
  • 2 cups cooked chicken breast, shredded or chopped (rotisserie chicken works great)
  • ½ cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • Blue Cheese Drizzle:
  • ½ cup blue cheese crumbles
  • ⅓ cup sour cream or Greek yogurt (use dairy-free yogurt for vegan option)
  • 2 tablespoons mayonnaise (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • ½ cup celery, thinly sliced
  • ¼ cup red onion, thinly sliced (optional)
  • Optional garnishes: chopped fresh parsley or chives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, mix melted butter with buffalo sauce and garlic powder. Add shredded chicken and toss to coat evenly.
  3. In a small bowl, whisk together blue cheese crumbles, sour cream or Greek yogurt, mayonnaise (if using), lemon juice, salt, and pepper until smooth but slightly chunky. Thin with a teaspoon of milk or water if too thick.
  4. Place flatbreads on a baking sheet. Optionally brush edges with olive oil for extra crunch.
  5. Spread buffalo chicken mixture evenly over each flatbread, leaving a small border around edges. Scatter sliced celery and red onion on top.
  6. Bake for 10-12 minutes until edges are golden and crisp and chicken is heated through. Check after 8 minutes to prevent burning.
  7. Remove from oven, let cool for a minute, then drizzle generously with blue cheese sauce. Garnish with parsley or chives if desired.
  8. Slice each flatbread into 4 pieces and serve warm.

Notes

Do not overload flatbread to keep crust crisp. Use high heat (425°F) for best crispiness. Toss chicken in sauce just before topping. Blue cheese drizzle should be smooth but slightly chunky; thin if too thick. Broil 1-2 minutes at end for extra crispness if needed. Rotisserie chicken saves time.
