  • 4 medium Yukon Gold or red potatoes, washed and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 6 slices bacon, cooked crisp and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 3 stalks green onions, thinly sliced
  • 1/2 cup sour cream (optional, for serving)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to fully heat for about 10 minutes.
  2. Slice the potatoes into 1/4-inch thick rounds, keeping them even for uniform cooking.
  3. Toss the potato slices in a mixing bowl with olive oil, smoked paprika, salt, and pepper until lightly coated.
  4. Arrange the potato rounds in a single layer on a parchment-lined baking sheet, avoiding overlap.
  5. Bake for 20 minutes, then carefully flip each potato round to the other side using tongs or a spatula.
  6. Bake for another 10 minutes until golden and tender; test doneness by poking with a fork.
  7. Remove the tray from the oven and sprinkle crumbled bacon and shredded cheddar evenly over the potato rounds.
  8. Return to the oven for 5-7 minutes or until the cheese is melted and bubbly.
  9. Once out, scatter sliced green onions on top.
  10. Serve warm with a dollop of sour cream on the side.

Notes

For extra crispiness, briefly broil the potato rounds after adding cheese and bacon, watching closely to avoid burning. Let potatoes rest a few minutes before serving to help cheese set. Avoid overcrowding the pan to prevent soggy potatoes. Use a mandoline slicer for even potato slices. Bacon should be cooked fully crisp before crumbling.
