  • ½ teaspoon smoked paprika
  • 2 stalks green onions, thinly sliced
  • A handful fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine refried beans with ground cumin and smoked paprika; stir well.
  3. Line a large rimmed baking sheet with parchment paper.
  4. Spread a single, even layer of tortilla chips across the sheet.
  5. Dollop and gently spread the seasoned refried beans over the chips in small patches.
  6. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the chips and beans.
  7. Bake on the middle rack for 8-10 minutes or until cheese is bubbly and slightly golden, watching closely after 7 minutes.
