These crispy Parmesan zucchini fritters are a quick and easy snack featuring a perfect balance of savory Parmesan and fresh zucchini, served with a tangy garlic yogurt dip.

  • 3 medium zucchinis, grated and moisture squeezed out
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, beaten
  • 2 cloves garlic, minced (for dip and optional in fritters)
  • 1 cup plain Greek yogurt
  • 2 tablespoons chopped fresh parsley or dill
  • Salt and pepper to taste
  • Olive oil or vegetable oil for frying
  • Optional: 1/4 cup finely chopped or grated onion
  • Optional: lemon juice, a squeeze for the dip

Instructions

  1. Grate the zucchinis using the large holes of a grater to yield about 3 cups (350g).
  2. Squeeze out as much moisture as possible from the grated zucchini using a fine mesh sieve, cheesecloth, or clean kitchen towel.
  3. In a large bowl, combine the squeezed zucchini, grated Parmesan, flour, beaten eggs, minced garlic (if using), chopped herbs, salt, and pepper. Stir until well combined. Add more flour if batter is too wet.
  4. In a small bowl, mix Greek yogurt with minced garlic, a pinch of salt, and a squeeze of lemon juice. Chill in the fridge.
  5. Heat about 2 tablespoons of oil in a large skillet over medium heat until shimmering.
  6. Scoop about 2 tablespoons of batter per fritter into the hot oil, flatten slightly with the back of a spoon. Fry in batches without overcrowding the pan for 3-4 minutes per side until golden brown and crisp.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm with the garlic yogurt dip.

Squeezing out zucchini moisture is crucial for crispiness. Use fresh grated Parmesan for best flavor and texture. Maintain medium heat to avoid burning or greasy fritters. Batter can rest 5-10 minutes before frying to improve binding. Keep cooked fritters warm in a low oven if frying multiple batches.
