  • 1 tablespoon hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 large head iceberg lettuce or butter lettuce (whole leaves separated and washed)
  • Optional garnishes: chopped cilantro, toasted sesame seeds, lime wedges

Instructions

  1. Finely chop the water chestnuts, green onions, garlic, and grate the ginger. Separate your lettuce leaves carefully, wash well, and set aside to dry on paper towels or use a salad spinner.
  2. Heat your skillet or wok over medium-high heat. Add sesame oil and swirl to coat. Add the ground chicken, breaking it up with your spatula. Cook until it starts to brown and crisp on the edges, about 7-8 minutes.
  3. Stir in garlic, ginger, and crushed red pepper flakes if using. Cook until fragrant, about 30 seconds. Then add the soy sauce, hoisin sauce, and rice vinegar. Mix well to coat the chicken evenly.
  4. Fold in chopped water chestnuts and green onions. Cook just until everything is heated through. Taste and adjust seasoning with salt and pepper.
