  • 810 slices prosciutto, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Lemon zest from 1 lemon (optional)
  • 1/4 cup finely grated Parmesan cheese (optional)
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and trim the tough ends of the asparagus (about 1-2 inches). If stalks are thick, slice them in half lengthwise.
  3. Blanch the asparagus by boiling in salted water for 1-2 minutes until bright green and slightly tender, then transfer immediately to an ice bath to stop cooking.
  4. Dry the asparagus thoroughly with a kitchen towel or paper towels.
  5. In a mixing bowl, toss the asparagus with olive oil, garlic powder (if using), and a pinch of black pepper.
  6. Cut each slice of prosciutto in half lengthwise if wide. Wrap each asparagus spear securely but not too tight with prosciutto.
  7. Arrange the wrapped asparagus in a single layer on a baking sheet lined with parchment paper or a silicone baking mat, seam side down.
  8. Bake for 12-15 minutes, watching closely near the end to prevent burning.
  9. Once out of the oven, grate lemon zest over the bites and sprinkle Parmesan cheese if desired.
  10. Serve immediately warm and crispy. If holding before serving, place on a wire rack to prevent sogginess.

Notes

Blanching asparagus before wrapping locks in color and tenderness and prevents prosciutto from drying out. Use thin prosciutto slices for best crispiness.
