  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil or clarified butter
  • Optional toppings: ketchup, mustard, chopped onions

Instructions

  1. In a mixing bowl, gently season 1 pound (450 g) of ground beef with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Avoid over-mixing to keep the texture tender. Let it rest while you warm your tortillas.
  2. Heat 8 small flour or corn tortillas in a dry skillet or microwave them wrapped in a damp paper towel for 20 seconds. Keep them warm wrapped in a clean kitchen towel to stay soft and pliable.
  3. Place your cast iron skillet over medium-high heat. Add 1 tablespoon of vegetable oil or clarified butter and let it shimmer.
  4. Divide the beef into 8 equal balls (about 2 ounces or 60 g each). Place one ball in the hot skillet and immediately press down firmly with your spatula or burger press to form a thin patty roughly the size of your tortilla. Cook for about 2 minutes without moving it to develop a crust.
  5. Carefully flip the patty, place an American cheese slice on top, and cook for another 1-2 minutes until melted and the patty is cooked through. Repeat for all patties, working in batches if necessary.
  6. Place each cheesy, crispy patty on a warm tortilla, top with 2-3 dill pickle slices, and add ketchup or mustard if desired. Fold and enjoy immediately.
