  • 2 large eggs (preferably free-range or organic)
  • 1 ripe Hass avocado
  • 1 tablespoon chili oil (store-bought or homemade)
  • 1 teaspoon everything bagel seasoning
  • 1 tablespoon butter or olive oil (for frying and toasting)
  • 1 teaspoon fresh lemon juice (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your toaster or oven to 375°F (190°C). Toast 2 slices of sourdough bread until golden and crispy, about 3–5 minutes. If using an oven, place bread on a baking sheet and broil for 2 minutes per side, watching closely to avoid burning.
  2. In a small bowl, scoop out the ripe avocado flesh. Add a pinch of salt, a few grinds of black pepper, and a squeeze of fresh lemon juice if desired. Mash gently with a fork until creamy but still a bit chunky.
  3. Heat 1 tablespoon of butter or olive oil in your skillet over medium heat. Once hot and shimmering, crack a large egg into the pan. Let it cook undisturbed for 2–3 minutes until the edges are golden and crispy but the yolk is still runny (or cook longer if you prefer it firmer). Use a spatula to carefully flip the egg and cook for an additional 30 seconds to 1 minute for over-easy style.
  4. Spread the mashed avocado evenly over the toasted bread slices. Gently place the crispy fried egg on top of each.
  5. Drizzle chili oil generously over the eggs and avocado. Sprinkle a healthy pinch (about 1 teaspoon) of everything bagel seasoning across the top. Add a little extra black pepper if desired.
  6. Serve immediately while the egg is warm and the bread still has that satisfying crunch.

Notes

For extra crispy egg edges, add 1 tablespoon of water to the pan and cover with a lid for 30 seconds during frying. Use fresh eggs for best texture. Toast thick-cut bread to avoid sogginess. Adjust chili oil amount to control spice level. For vegan version, replace egg with pan-fried tofu slices and use vegan butter or olive oil.
