  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ¾ cup (180ml) warm water (about 110°F/43°C)
  • 2 tablespoons olive oil, plus extra for brushing
  • Almond slices (for fingernails)
  • Optional: A pinch of smoked paprika or Italian seasoning to sprinkle on top
  • 1 head of garlic, cloves separated and unpeeled
  • 1 tablespoon olive oil
  • 1 can (14 oz/400g) crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (205°C). Slice off the top of the garlic head to expose cloves. Drizzle with olive oil, wrap loosely in foil, and roast for 30–35 minutes until cloves are soft and golden. Let cool, then squeeze out softened garlic into a bowl.
  2. In a saucepan over medium heat, add roasted garlic, crushed tomatoes, oregano, salt, and sugar. Stir well and simmer gently for 15 minutes, stirring occasionally. Taste and adjust seasoning. Keep warm on low heat.
  3. In a mixing bowl, combine warm water, sugar, and instant yeast. Stir lightly and wait 5 minutes until foamy.
  4. Add flour, salt, and olive oil to yeast mixture. Combine into a soft, slightly sticky dough.
  5. Knead dough on a floured surface for 8–10 minutes until smooth and elastic. Add flour if too sticky but keep dough tender.
  6. Place dough in lightly oiled bowl, cover, and let rise in warm spot for about 1 hour or until doubled in size.
  7. Punch down dough and divide into 12 equal pieces (~50g/1.75 oz each). Roll each into 5–6 inch (12–15 cm) finger shapes. Use kitchen scissors to cut small slits for knuckles. Press an almond slice at one end for fingernail.
  8. Arrange breadsticks on parchment-lined baking sheet, leaving space between. Cover loosely and let rise for 20 minutes.
  9. Preheat oven to 375°F (190°C). Dust baking sheet lightly with semolina flour for extra crunch.
  10. Brush breadsticks lightly with olive oil and bake for 18–22 minutes until golden and crispy on edges. They should sound hollow when tapped.
  11. Let cool slightly and serve warm with roasted garlic marinara. Garnish sauce with fresh basil if desired.

Notes

Dust baking sheet with semolina flour for extra crunch. Use kitchen scissors to cut knuckle lines for a natural look. Chill dough if breadsticks puff up too much. Roasting garlic gently is key to avoid bitterness. Dough can be made ahead and refrigerated overnight.
