Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. Slice yellow squash into thin rounds (about 1/4-inch thick) and finely chop the onion.
  3. Melt 2 tablespoons butter in a large skillet over medium heat. Add squash and onions and sauté gently for 8-10 minutes until tender but not mushy. Drain excess water if released.
  4. In a separate saucepan, melt remaining 2 tablespoons butter over medium-low heat. Stir in flour and cook for 1 minute to form a roux.
  5. Slowly whisk in milk, stirring continuously until thickened and smooth (about 3-4 minutes). Remove from heat.
  6. In a large mixing bowl, combine sautéed squash and onions with the thickened milk mixture. Add beaten eggs, shredded cheddar cheese, salt, and pepper. Mix gently but thoroughly.
  7. Pour the mixture evenly into the prepared casserole dish.
  8. Crush Ritz crackers finely and toss with 1 tablespoon melted butter.
  9. Sprinkle the cracker topping evenly over the casserole.
  10. Bake uncovered for 30-35 minutes until bubbly and topping is golden brown. Tent with foil if topping browns too quickly.
  11. Let rest for 10 minutes before serving.
