Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1–2 tablespoons sriracha sauce, plus more for spiderweb design
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Paprika or black sesame seeds for garnish (optional)

Instructions

  1. Hard-boil the eggs: Place 12 large eggs in a single layer in a large pot. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then cover the pot, remove from heat, and let sit for exactly 12 minutes. Transfer eggs to an ice bath immediately and let cool for at least 10 minutes.
  2. Peel and halve the eggs: Gently tap each egg on a hard surface to crack the shell, then roll it between your palms to loosen. Peel under running cold water. Slice each egg in half lengthwise. Carefully remove the yolks and place them in a medium bowl. Arrange the egg white halves on your serving platter, cut side up.
  3. Make the filling: Mash the yolks with a fork until they resemble fine crumbs. Add 1/3 cup mayonnaise, 1 tablespoon yellow mustard, 1-2 tablespoons sriracha, 1 teaspoon white vinegar, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon garlic powder if using. Mix until completely smooth. Taste and adjust seasoning.
  4. Fill the egg whites: Transfer the yolk mixture to a piping bag or zip-top bag. Snip off a small corner (about 1/4 inch). Pipe the filling into each egg white half, mounding it slightly.
  5. Create the spiderweb design: Using a squeeze bottle or a small spoon, drizzle thin lines of sriracha across the filled eggs in a spiral pattern. Start from the center and work outward. Then, using a toothpick, gently drag from the center outward through the sriracha lines, creating the web effect. Wipe the toothpick clean between each drag. Repeat on all eggs.
  6. Garnish and serve: If desired, sprinkle a tiny pinch of paprika or black sesame seeds over the eggs. Serve immediately or refrigerate until ready to serve.

Notes

For best results, use older eggs (at least a week old) for easier peeling. The spiderweb design is best added just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Do not freeze.
