Crunchy Asian Chicken Salad with Sesame Dressing

A quick and easy 20-minute salad featuring crunchy cabbage, tender rotisserie chicken, and a bold sesame dressing. Perfect for busy weeknights, meal prep, or potlucks.

  • 3 cups shredded rotisserie chicken
  • 4 cups thinly sliced green cabbage
  • 2 cups thinly sliced red cabbage
  • 1 cup julienned or shredded carrots
  • 1 cup shelled edamame (thawed if frozen)
  • 1/2 cup sliced green onions
  • 1/2 cup roughly chopped cilantro (optional)
  • 1/2 cup slivered almonds, toasted
  • 1 cup wonton strips
  • 2 tablespoons sesame seeds, toasted
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sriracha (optional)
  • 1/4 cup vegetable oil

Instructions

  1. Make the dressing: In a small bowl or mason jar, combine soy sauce, rice vinegar, toasted sesame oil, honey, grated ginger, minced garlic, and sriracha. Whisk or shake until honey is dissolved. Slowly drizzle in vegetable oil while whisking constantly to emulsify. Set aside.
  2. Toast the almonds and sesame seeds: Heat a small skillet over medium heat. Add slivered almonds and cook, stirring frequently, until golden and fragrant (3-4 minutes). In the last 30 seconds, add sesame seeds and stir until lightly toasted. Transfer to a plate to cool.
  3. Prep the vegetables: Thinly slice green and red cabbage. Julienne or shred carrots. Slice green onions and chop cilantro.
  4. Shred the chicken: Remove skin from rotisserie chicken and shred meat using two forks or your hands. You should have about 3 cups.
  5. Combine salad ingredients: In a large mixing bowl, add shredded cabbage, red cabbage, carrots, edamame, green onions, cilantro, and shredded chicken. Toss to combine.
  6. Add dressing: Pour about 3/4 of the dressing over the salad and toss thoroughly. Add more dressing if needed, a tablespoon at a time, until salad is glossy but not soggy.
  7. Finish with crunch: Add toasted almonds, sesame seeds, and wonton strips. Toss gently to distribute.
  8. Taste and adjust: Adjust seasoning with extra soy sauce, rice vinegar, or honey as desired.
  9. Serve immediately: Transfer to a serving bowl or individual plates. Garnish with extra green onions, sesame seeds, or a squeeze of lime if desired.

Notes

For meal prep, keep dressing, crunchy toppings, and salad separate. Combine just before serving to maintain crunch. The dressing can be made up to a week ahead. The salad base (without dressing and toppings) can be prepped a day in advance.
