Ingredients

Scale
  • 1 cup (227 g) unsalted butter, melted and cooled
  • 1 ½ cups (300 g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125 g) all-purpose flour, sifted
  • ¾ cup (75 g) unsweetened cocoa powder, sifted
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup (120 ml) store-bought salted caramel sauce
  • Pinch of flaky sea salt
  • ½ cup (90 g) bittersweet chocolate chips
  • ¼ cup (60 ml) heavy cream
  • 1 tablespoon (14 g) butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) square baking pan with parchment paper, leaving an overhang for easy removal. Lightly grease the parchment if desired. This takes about 10 minutes.
  2. In a large bowl, whisk the melted butter and granulated sugar together until glossy and smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold dry ingredients into the wet mixture using a rubber spatula, careful not to overmix, until thick and fudgy. This should take about 10-12 minutes.
  3. In a small saucepan over low heat, combine chocolate chips, heavy cream, and softened butter. Stir continuously until smooth and glossy. Remove from heat and let cool slightly, about 5 minutes, until pourable but not hot.
  4. Pour half the brownie batter into the prepared pan and smooth the top. Drizzle half the salted caramel sauce evenly over the batter, then add about 2 tablespoons of the fudge swirl in small dollops. Add the rest of the brownie batter and repeat the salted caramel and fudge swirl layering on top. Use a skewer or toothpick to gently swirl the caramel and fudge into the batter, creating ribbons. Do not over-swirl. This step takes about 10 minutes.
  5. Bake for 30-35 minutes. Check doneness by inserting a toothpick near the center; it should come out with moist crumbs, not wet batter. Remove from oven and immediately sprinkle flaky sea salt over the top. Cool completely in the pan on a wire rack, about 1.5 hours, before lifting out and slicing.

Notes

Do not overmix the batter to keep brownies fudgy. Use a light hand when swirling fudge and caramel to create pretty ribbons. Chill caramel slightly before swirling to prevent sinking. Cool brownies completely before slicing to allow caramel to set. For gluten-free, substitute flour with gluten-free blend. For dairy-free, use coconut oil and plant-based cream.
