  • 4 cups fresh rhubarb, chopped into 1-inch pieces (or 1 can/12 ounces canned rhubarb or rhubarb preserves)
  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup (2 sticks, 226 grams) unsalted butter, melted
  • Optional: pinch of cinnamon
  • Optional: 1/2 cup granulated sugar (for sweeter rhubarb)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If using fresh rhubarb, wash and chop into 1-inch pieces. Toss with 1 tablespoon sugar if desired.
  3. Spread rhubarb evenly in the bottom of a greased 9×13 inch baking dish.
  4. Sprinkle dry yellow cake mix evenly over the rhubarb without stirring.
  5. Pour melted butter slowly over the cake mix, covering as much surface as possible.
  6. Bake for 40-45 minutes until the top is golden brown and bubbling around the edges.
  7. Remove from oven and let cool for about 15 minutes to set.
  8. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Do not stir the cake mix into the rhubarb to avoid a dense, soggy texture. Pour melted butter slowly and evenly. Let the cake rest after baking to thicken the filling. If the cake is too runny, bake a few extra minutes uncovered. Use real unsalted butter for best flavor and texture. For dairy-free, substitute butter with coconut oil or vegan margarine. For gluten-free, use a gluten-free yellow cake mix.
