Instructions

  1. Preheat your oven to 350°F (175°C). Peel and slice apples about ¼-inch thick. Toss slices in a bowl with 2 tablespoons of the brown sugar and ½ teaspoon of cinnamon. Let sit for a few minutes.
  2. In a small bowl, combine rolled oats, remaining 1 tablespoon brown sugar, and remaining ½ teaspoon cinnamon. Add cold cubed butter. Use fingers or a fork to work butter into oat mixture until it looks like coarse crumbs.
  3. Divide apple mixture evenly between two 8-ounce ramekins (or spread in a small baking dish). Sprinkle oat topping evenly over apples. Do not press down.
  4. Place ramekins on a baking sheet. Bake for 20-25 minutes until topping is golden brown and apples are bubbling around the edges. If topping browns too fast, tent loosely with foil for last 5 minutes.
  5. Let cool for 5 minutes. Serve warm, preferably with vanilla ice cream or whipped cream.
