Easy Back-to-School Peanut Butter Banana Overnight Oats Recipe

A quick and easy overnight oats recipe with mashed banana and creamy peanut butter, perfect for busy school mornings. Just 5 minutes of prep and the fridge does the work.

  • 1 cup (90g) rolled oats
  • 1 large ripe banana (about 120g)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk of choice (e.g., whole milk, oat milk, almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1–2 tablespoons honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • For topping (optional): sliced banana, extra peanut butter, granola, chocolate chips

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a jar or container. Use a fork to mash until mostly smooth with a few small lumps.
  2. Add the wet ingredients: Spoon in the peanut butter, Greek yogurt, and milk. Add honey or maple syrup if using. Do not stir yet.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a pinch of salt.
  4. Stir everything together: Stir vigorously for a full minute until the peanut butter is fully incorporated and no dry oats remain. If too thick, add a splash of milk; if too thin, add a tablespoon more oats.
  5. Seal and refrigerate: Put the lid on the jar and refrigerate overnight, or for at least 4-6 hours.
  6. Add toppings and serve: In the morning, stir the oats. If too thick, stir in a splash of milk. Top with sliced banana, a drizzle of peanut butter, granola, or other desired toppings.

Notes

For best results, use rolled oats (not instant or steel-cut). The riper the banana, the sweeter the oats. Stir peanut butter well before measuring. Oats keep in the fridge for up to 5 days. For warm oats, microwave individual portions for 45-60 seconds, stirring halfway through.
