  • 1 1/2 cups (150 g) shredded sharp cheddar cheese
  • 6 slices crispy cooked bacon, chopped
  • 12 ounces (355 ml) beer (lager or pale ale recommended)
  • 2 tablespoons (28 g) melted butter for brushing
  • Optional: 2 tablespoons diced green onions
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  3. Stir in the shredded cheddar cheese and chopped crispy bacon. Add optional diced green onions and garlic powder if using. Mix gently to coat the cheese and bacon with the flour mixture.
  4. Slowly pour in the beer and stir with a wooden spoon or spatula just until combined. The batter will be thick and lumpy; do not overmix.
  5. Transfer the batter evenly into the prepared loaf pan and smooth the top gently.
  6. Brush the top with melted butter to create a golden, crispy crust.
  7. Bake for 45 to 50 minutes. Check doneness by inserting a toothpick in the center; it should come out clean or with a few crumbs. If wet, bake an additional 5 minutes and check again.
  8. Remove from oven and let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  9. Slice into thick pieces and serve warm or at room temperature.
