  • 1 cup sharp cheddar cheese, shredded

  • 1/4 teaspoon garlic powder (optional)
  • 4 large flour tortillas (burrito-sized, about 10 inches)

Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 30 minutes before you start. You want it soft enough that you can press your finger into it easily. If you forgot, microwave it in 10-second bursts until just softened—not melted!
  2. Make the filling: In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Beat with a hand mixer on medium speed until smooth and fluffy—about 2 minutes. Scrape down the sides once or twice.
  3. Add the mix-ins: Fold in the shredded cheddar cheese, bacon bits, and chopped green onions by hand. Stir until everything is evenly distributed. Add a pinch of garlic powder if you want more savory depth.
  4. Prepare the tortillas: Lay your tortillas flat on a clean work surface. If they feel stiff, microwave them for 10-15 seconds to make them more pliable.
  5. Spread the filling: Divide the filling evenly among the four tortillas—about 1/2 cup per tortilla. Use a spatula or the back of a spoon to spread it all the way to the edges. Leave about a 1-inch border on the far side so the filling doesn’t squeeze out when you roll.
  6. Roll them up tight: Starting from the edge closest to you, roll each tortilla tightly but gently. Tuck the edge under as you go, keeping even pressure. When you reach the end, press gently to seal.
  7. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap or wax paper. Twist the ends like a candy wrapper to keep them secure. Place them on a baking sheet or plate and refrigerate for at least 1 hour. Two hours is even better.
  8. Slice and serve: Unwrap the chilled rolls and place them on a cutting board. Using a sharp knife, trim off the ragged ends (about 1/2 inch from each side). Then slice the roll into 1-inch pinwheels. You should get about 8-9 slices per tortilla. Wipe your knife clean between cuts for the neatest slices.
