  • 4 salmon fillets (6 oz / 170 g each), skin-on or skinless
  • 1 large head broccoli, cut into bite-sized florets
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper, to taste
  • Optional: pinch of smoked paprika or chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, and fresh lemon juice until smooth.
  3. Pat the salmon fillets dry with paper towels. Lightly salt and pepper both sides.
  4. Toss broccoli florets with a drizzle of olive oil, salt, and pepper. Spread them out evenly on a rimmed baking sheet.
  5. Place salmon fillets on the baking sheet among the broccoli, skin-side down if applicable.
  6. Brush the honey mustard glaze generously over the salmon and a little onto the broccoli.
  7. Bake for 15-18 minutes, depending on thickness, until salmon flakes easily with a fork but remains moist. If broccoli isn’t tender and slightly charred, broil for 2-3 minutes more, watching carefully.
  8. Rest the salmon for 2 minutes after removing from the oven before serving.

Pat salmon dry to ensure a glossy glaze. Avoid overcrowding the pan to prevent soggy broccoli. Use fresh garlic for best flavor. Check salmon doneness at 15 minutes to avoid overcooking. Rest salmon before serving to keep it juicy. Toss broccoli halfway through baking for even roasting if desired.
