This spooky spider-web nacho platter features smoky roasted black beans, melted cheese, and a fun sour cream web design. It’s the perfect quick and easy Halloween party appetizer that will have everyone asking for the recipe.

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 3 cups shredded Mexican blend cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1/4 cup black olives, sliced
  • 1/4 cup green onions, thinly sliced
  • 1 jalapeño, thinly sliced (optional)
  • 1/2 cup pico de gallo or fresh salsa (optional)
  • 1 avocado, diced (optional)
  • Fresh cilantro, chopped (optional)
  • Hot sauce (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Drain and rinse black beans thoroughly. Pat them dry with a clean towel. In a mixing bowl, toss the beans with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet.
  3. Roast the beans for 10 minutes until slightly wrinkled and fragrant.
  4. Remove the baking sheet from the oven. Push the roasted beans to one side. Spread tortilla chips in an even layer across the remaining space.
  5. Sprinkle shredded Mexican blend cheese and Monterey Jack cheese evenly over the chips. Scatter the roasted black beans over the top.
  6. Return to the oven for 8-10 minutes, until the cheese is fully melted and bubbly.
  7. Remove from the oven and let cool for 2-3 minutes. Spoon sour cream into a piping bag or zip-top bag with a tiny corner snipped off. Pipe concentric circles of sour cream over the nachos. Use a toothpick to drag lines from the center outward through the circles to create a web effect.
  8. Place sliced black olives on the sour cream web to resemble spiders. Garnish with green onions, jalapeño slices, and optional toppings. Serve immediately.

Notes

Pat the black beans dry before roasting to ensure they get crispy. Let the platter rest for 2-3 minutes before adding the sour cream web to prevent melting. For best results, use a single layer of chips and avoid overloading.
