This copycat Starbucks pumpkin cream cold foam cold brew is creamy, spiced, and ridiculously easy to make. It’s cheaper, faster, and honestly, I like it better than the original.

  • 1 cup (240 ml) cold brew coffee
  • ¼ cup (60 ml) cold heavy cream
  • 2 tablespoons (30 g) pure pumpkin puree
  • 1 tablespoon (15 ml) vanilla syrup (or 1 tsp vanilla extract + 1 tsp maple syrup)
  • ½ teaspoon pumpkin pie spice
  • 1 teaspoon maple syrup or brown sugar (optional, for extra sweetness)
  • Ice cubes

Instructions

  1. Fill a tall glass with ice cubes. Pour 1 cup (240 ml) of cold brew coffee over the ice. Set aside.
  2. In a small bowl, combine ¼ cup (60 ml) of cold heavy cream, 2 tablespoons (30 g) of pumpkin puree, 1 tablespoon (15 ml) of vanilla syrup, and ½ teaspoon of pumpkin pie spice. Whisk gently until the pumpkin is fully incorporated into the cream, about 30 seconds.
  3. Using a handheld frother, froth the pumpkin cream mixture for 20-30 seconds until thick and airy, holding soft peaks. Alternatively, use a French press by pumping the plunger vigorously for 30-40 seconds.
  4. Gently spoon the pumpkin cream foam over the cold brew. Do not stir. The foam should sit on top, creating a beautiful layered effect.
  5. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam for garnish. Serve immediately.

Notes

For best results, use cold ingredients. Chill the bowl and whisk for 10 minutes before starting. If foam is too runny, chill the cream further. If too thick, add a teaspoon of milk. The unfrothed pumpkin cream mixture can be stored in the fridge for up to 3 days; re-froth before using.
