  • 8–10 ounces roasted turkey breast, sliced thin
  • 4–6 slices prosciutto or speck
  • 4 ounces smoked turkey sausage, sliced (optional)
  • 1 cup homemade or high-quality cranberry compote
  • 1/3 cup dried cranberries
  • 2 tablespoons cranberry chutney or relish
  • 4 ounces aged gouda, sliced thin
  • 4 ounces soft brie or camembert
  • 4 ounces sharp white cheddar, cubed
  • 2 ounces goat cheese log (optional)
  • 1 cup mixed crackers (water crackers, rosemary crackers, buttery rounds)
  • 1/2 cup toasted pecans or candied walnuts
  • 1/3 cup cornichons or small pickles
  • 1/4 cup honey or fig jam
  • Fresh herbs for garnish: rosemary sprigs, thyme, or sage leaves
  • 1 apple or pear, sliced thin (optional)

Instructions

  1. Start with the bowls (5 minutes). Place your small bowls or ramekins on the board first. I like to arrange them in a loose triangle pattern—one for the cranberry compote, one for the honey or fig jam, one for the cornichons, and one for the pecans.
  2. Add the cheese (5 minutes). Place the brie whole on the board near the honey bowl. Arrange the sliced gouda in a fan pattern opposite the brie. Scatter the cheddar cubes in small clusters around the board. If using goat cheese, roll it in chopped fresh herbs or cracked black pepper first.
  3. Layer the turkey (3 minutes). Fold each slice of turkey breast into loose ribbons or rosettes and arrange them in a mound near the center of the board. Drape the prosciutto slices in a separate, slightly rumpled pile. If using smoked turkey sausage, slice it on a diagonal and arrange it in a small fan.
  4. Fill in with accompaniments (5 minutes). Scatter the dried cranberries in small gaps between the cheese and meat. Add the crackers in clusters. Tuck the apple or pear slices in between the cheese wedges. Sprinkle the toasted pecans in the remaining empty spaces.
  5. Garnish and finish (2 minutes). Tuck small sprigs of rosemary or thyme throughout the board. Drizzle a little honey over the brie if using. Give the cranberry compote a quick stir and place it back in its bowl. Step back, look at the board, and fill any obvious gaps with extra crackers or nuts.
  6. Serve immediately or refrigerate. If making ahead, cover the entire board loosely with plastic wrap and refrigerate for up to 4 hours. Let it sit at room temperature for 20 minutes before serving.

Let the board sit at room temperature for 20 minutes before serving for best flavor. Keep wet ingredients like cranberry compote in bowls to prevent sogginess. Add apple slices just before serving. The cranberry compote tastes even better after a day or two in the fridge.
