Easy Creamy Buffalo Chicken Dip with Crispy Wonton Chips

This creamy buffalo chicken dip is rich, tangy, and perfectly spicy, served with homemade crispy wonton chips that are thin, crunchy, and sturdy enough for scooping. It’s the ultimate crowd-pleaser for game day or any gathering.

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup crumbled blue cheese, optional
  • 2 green onions, sliced
  • 24 wonton wrappers
  • 2 tablespoons olive oil or avocado oil
  • 1/2 teaspoon garlic powder, optional
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the wonton chips first. Stack about 6 wonton wrappers on a cutting board. Using a pizza cutter or sharp knife, cut them diagonally to form triangles. I usually cut them into quarters, so each wrapper makes four chips.
  3. Arrange the wonton triangles on a baking sheet lined with parchment paper. Make sure they’re in a single layer and not overlapping.
  4. Brush the wonton triangles lightly with oil. Use a pastry brush to coat each triangle with a thin, even layer of olive or avocado oil. Sprinkle with garlic powder and salt if using.
  5. Bake the wonton chips for 8-10 minutes until they’re golden brown and crispy. Keep an eye on them after 7 minutes. Let them cool on the baking sheet while you make the dip.
  6. In a medium mixing bowl, combine the softened cream cheese, buffalo sauce, ranch dressing, and sour cream. Mix until smooth and well combined.
  7. Fold in the shredded chicken and 1 cup of the shredded cheddar cheese. Stir until everything is evenly distributed.
  8. Transfer the mixture to your baking dish and spread it into an even layer. Sprinkle the remaining 1/2 cup of cheddar cheese on top, along with the crumbled blue cheese if using.
  9. Bake the dip for 15-20 minutes until it’s hot and bubbly and the cheese on top is melted and lightly golden.
  10. Remove from the oven and let it rest for 5 minutes. Garnish with sliced green onions and serve immediately with the crispy wonton chips.

Notes

For best results, let cream cheese soften at room temperature for 30 minutes before starting. The dip can be made a day ahead and refrigerated; add 5-10 minutes to baking time if starting from cold. Wonton chips are best made fresh but can be cut and stored in an airtight container for a day before baking.
